Yummy Potatoes (aka Funeral Potatoes)

Don't let the funeral part of the name scare you.  I grew up calling them that because I don't remember a funeral that I have been to where this dish wasn't served for the family dinner afterward.  Until I was in high school the only place I ever ate it was at a funeral.  Then my mom started making it for most of our hoilday gatherings (mainly Thanksgiving and Christmas).  It is now an important part of our large family dinners together.  I have started making it for my own little family.  My kids love it.

2-3 lbs frozen cubed hash browns    
1 can cream of chicken soup            
1 can cream of celery soup                 
1 can cream of mushroom soup         
1 pt sour cream
2 Tbs. chopped onion (I put in more)

2 C. grated cheese
2 C crushed cornflakes (optional)

Cream together soups, sour cream, and onions, then mix in cheese & thawed hash browns.  If using cornflakes, mix with 4 Tbs butter and cover top of potatoes.  Bake in 9X13 pan or casserole dish for 1 1/2 hrs at 350.  If using frozen potatoes it will take longer to bake.
